We've dedicated our small family farm in St Johns Arizona to producing premium meats, using regenerative farming methods.


These culinary pork delicacies take 3x as long to produce, compared to regular market hogs. Unlike "the other white meat" these well-marbled red meats contain a high percentage of succulent, intramuscular fats.


We love Mangalitsa pork for its high concentration of unsaturated fats. Roughly 58% to 63% of its fatty acid composition consists of monounsaturated fats, primarily oleic acid. This is the same heart-healthy fat found abundantly in extra virgin olive oil.


Mangalitsa fat is also an abundant source of Conjugated Linoleic Acid (CLA). This particular fatty acid is widely studied for its ability to positively alter body composition, support metabolic health, and boost overall immune function.


The health and happiness of the pigs is important in producing the best possible pork products. Our Mangalitsa are raised outdoors in large rotating pasture paddocks, resulting in increased levels of Vitamin D, antioxidants, Omega-3 and Omega-6 polyunsaturated fatty acids.

These meats all melt in the skillet on low heat! Best smoked pork chops I've ever had. The ground pork makes amazingly succulent hamburgers. But that slow cooked fresh belly made us feel like royalty for the day!

what is Mangalitsa?

Mangalitsa (pronounced mahn-ga-leets-ah) is a unique breed of pig native to Hungary, distinguished by its woolly, sheep-like coat.


Exceptional Texture and Flavor: The pork is highly marbled with intramuscular fat, resulting in a rich, succulent, and incredibly tender and juicy meat. It's often referred to as the "Kobe beef of pork" due to its high marbling and buttery texture.


High Fat Content: Mangalitsa pigs are known for their lard, which was once widely used for cooking, candles, cosmetics, and more. The lard is flavorful and, surprisingly, has more unsaturated fat than butter.


Heritage Breed: Mangalitsa are a slow-growing lard type breed, developed for royalty in Hungary in the 1830's. By the end of the 1800's Mangalitsa were the most popular breed in the Austro-Hungarian empire, with over 20,000 pigs. Herd sizes dwindled dramatically during WWI and again during WWII. By 1991, there were only 30 remaining sows worldwide. First imported to the US in 2007, there are currently an estimated 2,000 purebred Mangalitsa in the US... with fewer than 100 in Arizona.


Versatility: The high fat content of Mangalitsa pork makes it ideal for curing and charcuterie, like pancetta and salami. It's also excellent for cooking, requiring minimal seasoning to bring out its natural flavors.


Only imported to the U.S. between 2007 and 2016, Mangalitsa pork is highly sought after by chefs and food enthusiasts and is considered a delicacy in gourmet circles. Its resurgence highlights a renewed appreciation for traditional farming practices and the preservation of unique livestock breeds.
