what is Mangalitsa?
Mangalitsa (pronounced mahn-ga-leets-ah) is a unique breed of pig native to Hungary, distinguished by its woolly, sheep-like coat.
Exceptional Texture and Flavor: The pork is highly marbled with intramuscular fat, resulting in a rich, succulent, and incredibly tender and juicy meat. It's often referred to as the "Kobe beef of pork" due to its high marbling and buttery texture.
High Fat Content: Mangalitsa pigs are known for their lard, which was once widely used for cooking, candles, cosmetics, and more. The lard is flavorful and, surprisingly, has more unsaturated fat than butter.
Heritage Breed: Mangalitsa are a slow-growing heritage breed, emphasizing quality and sustainability. They were nearly extinct in Europe by the 1990s but have made a comeback due to renewed interest in their unique qualities.
Versatility: The high fat content of Mangalitsa pork makes it ideal for curing and charcuterie, like pancetta and salami. It's also excellent for cooking, requiring minimal seasoning to bring out its natural flavors.
Only imported to the U.S. between 2007 and 2016, Mangalitsa pork is highly sought after by chefs and food enthusiasts and is considered a delicacy in gourmet circles. Its resurgence highlights a renewed appreciation for traditional farming practices and the preservation of unique livestock breeds.
